Loaded Smashed Potatoes Recipe
Ingredients:
800g baby potatoes
2 tbsp olive oil
1 cup shredded cheddar cheese
1/2 cup cooked bacon, crumbled
1/2 cup sour cream
1/4 cup chopped chives or green onions
Salt and pepper
Optional: garlic powder, paprika
Preparation:
Preheat oven to 220°C (425°F). Line a baking sheet with parchment paper.
Boil potatoes in salted water until fork-tender, about 15–20 minutes. Drain well.
Place potatoes on the baking sheet and gently smash each one with a fork or potato masher.
Drizzle with olive oil, then sprinkle with salt, pepper, and optional garlic powder or paprika.
For extra crispiness, flip potatoes halfway through roasting if desired.
Bake & Load:
Bake for 25–30 minutes or until golden and crispy on the edges.
Sprinkle cheddar cheese and bacon over the potatoes in the last 5 minutes of baking.
Remove from oven and let cool slightly before topping.
Serve:
Dollop with sour cream and sprinkle with chives or green onions.
Serve immediately while hot and melty.
Loaded smashed potatoes are perfect as a side or party snack!
