Loaded Smashed Potatoes Recipe
Ingredients:
  • 800g baby potatoes
  • 2 tbsp olive oil
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/2 cup sour cream
  • 1/4 cup chopped chives or green onions
  • Salt and pepper
  • Optional: garlic powder, paprika
  1. Preparation:
    • Preheat oven to 220°C (425°F). Line a baking sheet with parchment paper.
    • Boil potatoes in salted water until fork-tender, about 15–20 minutes. Drain well.
    • Place potatoes on the baking sheet and gently smash each one with a fork or potato masher.
    • Drizzle with olive oil, then sprinkle with salt, pepper, and optional garlic powder or paprika.
    • For extra crispiness, flip potatoes halfway through roasting if desired.
  2. Bake & Load:
    • Bake for 25–30 minutes or until golden and crispy on the edges.
    • Sprinkle cheddar cheese and bacon over the potatoes in the last 5 minutes of baking.
    • Remove from oven and let cool slightly before topping.
  3. Serve:
    • Dollop with sour cream and sprinkle with chives or green onions.
    • Serve immediately while hot and melty.
    • Loaded smashed potatoes are perfect as a side or party snack!
